TR19® kitchen extract cleaning in Brighton

Brighton and Hove has a lively food scene: seafront restaurants, cafés in The Lanes and North Laine, busy pubs, hotels along the front, and the kitchens that feed universities, schools and hospitals. Every one of them has an extract system that collects grease and needs cleaning. We clean kitchen extract to BESA’s TR19® Grease specification across the city, from Hove to Kemptown and out to the edges.

Each job starts with a survey, from photos or on site, so we know where the duct goes and how heavy the grease is. You get a fixed quote, usually within one working day. We clean when you’re closed, then send a TR19® certificate and a photo report with before and after pictures. We are a BESCA Vent Hygiene Elite member, cleaning to BESA TR19® Grease. See kitchen extract cleaning for what a full clean covers.

If you have taken over a restaurant or pub and don’t know when the extract was last cleaned, start with a TR19 inspection. Grease readings show what state the system is in and what it needs.

Seafront kitchens, The Lanes and salt air

Brighton’s restaurants are often in old buildings: Regency terraces on the seafront, narrow streets in The Lanes and converted shops in North Laine. Kitchens are squeezed into back rooms and basements, and the extract has to find a way out, often up the back of the building to a fan on the roof. Ducts like that tend to be long, with bends and few access panels. Our survey finds the full route before we quote, and we record any section that can’t be reached.

Being by the sea brings its own problem. Salt air is hard on metal, and roof fans, fan housings, fixings and discharge cowls near the coast can corrode faster than those inland. A fan that is rusting and coated in grease works harder and fails sooner. When we clean the extract fan, we check its condition and tell you if it needs attention, and we can carry out extract fan repair or replacement.

The city is busy at weekends, in summer and during big events, so kitchens often cook long hours at exactly the times we can’t clean. We work overnight, early in the morning and on your quiet days, and plan around the season so the system is clean before the busiest weeks.

Smaller seafront and Lanes kitchens can still produce a lot of grease. Grills, fryers and pizza ovens running all weekend fill filters fast, so a regular grease filter exchange between full cleans helps keep the canopy and plenum under control.

Food Standards Agency records list about 685 restaurants, cafés and canteens, 137 takeaways, 243 pubs and bars and 44 hotels and guest houses within roughly a mile and a half of the centre of Brighton, plus 51 schools and colleges and 64 hospitals, care and childcare premises. Every one that cooks under a canopy has an extract that needs cleaning. Source: FSA food hygiene rating data, October 2026.

Who inspects Brighton and Hove kitchens

Food businesses in the city are inspected by Brighton & Hove City Council’s environmental health team. Officers look at the cleanliness of the kitchen and its equipment, including extraction, and the rating is published on the Food Standards Agency’s food hygiene ratings site.

Fire safety in workplaces is enforced by East Sussex Fire and Rescue Service, which covers Brighton and Hove. Its officers carry out fire safety audits and can take enforcement action under the Regulatory Reform (Fire Safety) Order 2005. That law puts the duty on the responsible person, usually the business owner, employer, landlord or managing agent, to assess and reduce fire risk. For a kitchen, that includes grease in the extract. GOV.UK’s guide to workplace fire safety explains the duties.

TR19® is not law, but it is the benchmark fire officers, EHOs and insurers look to. A current certificate and photo report shows the extract has been cleaned properly. In a building split into flats above a restaurant, a clean duct also protects the people living upstairs.

Many restaurants in the city are tenants. Leases often say who arranges extract cleaning, so check yours and keep the certificates where both landlord and tenant can find them.

Kitchens across the city

We clean extract for restaurants and pubs across Brighton and Hove, and for hotels and guest houses along the seafront, where kitchen, laundry and riser ductwork can all be done in one programme. The city has two universities, the University of Sussex and the University of Brighton, as well as colleges and schools; their kitchens are best cleaned in the holidays (see schools and colleges). Hospitals and care homes need careful, planned work, and offices and shops need ventilation and AHU cleaning out of hours. We also clean grease traps and test fire dampers.

Takeaways and food production units are covered on our food production and leisure page, and many of the city’s cafés only need a smaller canopy and duct cleaned on a light-use schedule. Operators with several sites in Brighton and across Sussex can put them all on one maintenance contract, with each kitchen on its own interval and its own records. Our 24/7 emergency line covers fan failures and urgent cleans.

How it works

  1. Send details. Tell us about your kitchen or building and send a few photos: canopy, filters, access panels and the last certificate if you have one.
  2. Get a fixed quote. We survey from your photos or on site and give you a fixed price, usually within one working day.
  3. We clean. We arrive when you’re closed, protect the kitchen and clean the system back to bare metal wherever it can be reached.
  4. Certified. You get a TR19® certificate and a photo report, with the readings, anything we couldn’t reach and the next clean date.

Do you cover Hove as well as Brighton?

Yes. We cover the whole of Brighton and Hove, and the rest of East and West Sussex.

East Sussex Fire and Rescue Service enforces workplace fire safety, and Brighton & Hove City Council inspects food hygiene.

What do we get after the clean?
