TR19® kitchen extract cleaning in Oxford

Oxford’s kitchens range from medieval college halls to modern restaurants, busy pubs, hotels and large hospital kitchens. Old or new, every extract system collects grease and needs cleaning. We clean kitchen extract to BESA’s TR19® Grease specification across Oxford and the rest of Oxfordshire: canopy, plenum, filters, ductwork, fan and discharge.

We survey first, from photos or on site, so we understand the building before we quote. You get a fixed quote, usually within one working day. We clean when the kitchen is closed, then issue a TR19® certificate and a photo report with before and after pictures. We are a BESCA Vent Hygiene Elite member, cleaning to BESA TR19® Grease. See kitchen extract cleaning for what a full clean covers.

If you have taken over a kitchen and don’t know when the extract was last cleaned, start with a TR19 inspection. Grease readings and photos show the state of the system and what it needs.

College kitchens and historic buildings

The colleges of the University of Oxford have their own kitchens, many serving dining halls, conferences and events as well as students. Oxford Brookes University adds more. These kitchens follow the academic year, with heavy use in term and quieter vacations, which are the natural time to clean. In term, cleaning can still be done overnight or between events.

Many of these kitchens, and many restaurants and pubs in the centre, sit in historic and listed buildings. The extract may have been threaded through old walls, roof spaces and chimneys long after the building was built. Ductwork like that can be hard to reach, and adding access is not always simple. Where reaching a duct means opening up historic walls or ceilings, the building owner may need to speak to the council’s conservation team first. We record any section we can’t reach on the report, and where new access panels can be fitted within the ductwork itself, we can fit them.

The city centre is compact and busy, with restricted vehicle access on some streets, so we plan parking and access before the visit. The John Radcliffe Hospital and other hospitals, schools and care homes add kitchens that need careful planning around meals and hygiene.

College kitchens also host conferences, summer schools and events when students are away, so the quiet weeks can be shorter than they look. It helps to book cleans well ahead and fit them around the events calendar, rather than leave them until the last week of the vacation.

Food Standards Agency records list about 366 restaurants, cafés and canteens, 47 takeaways, 97 pubs and bars and 14 hotels and guest houses within roughly a mile and a half of the centre of Oxford, plus 80 schools and colleges and 28 hospitals, care and childcare premises. Every one that cooks under a canopy has an extract that needs cleaning. Source: FSA food hygiene rating data, October 2026.

Who inspects Oxford kitchens

Food businesses in the city are inspected by Oxford City Council’s environmental health team, and sites elsewhere in the county by their own district council. Officers check the cleanliness of premises and equipment, including extraction, and ratings are published on the Food Standards Agency’s food hygiene ratings site.

Fire safety in workplaces is enforced by Oxfordshire Fire and Rescue Service. Its officers carry out audits and can take enforcement action under the Regulatory Reform (Fire Safety) Order 2005. The responsible person, which for a college might be the college itself and for a restaurant the owner or operator, must assess and reduce fire risk. In a kitchen, that means keeping grease in the extract under control. GOV.UK’s guide to workplace fire safety explains the duties.

TR19® is not law, but it is BESA’s specification and the benchmark fire officers, EHOs and insurers look to. In a historic building, where a fire could do damage that can’t be undone, a clean extract matters all the more.

In a college or institution, responsibility for fire safety often sits with a bursar, estates or domestic team. Whoever holds it should keep the certificates and photo reports with the fire risk assessment.

Oxford’s kitchens

College and school kitchens are covered on our schools and colleges page. We clean extract for restaurants and pubs in the centre and suburbs, and for hotels, where kitchen, laundry and riser ductwork can be cleaned in one programme. Hospitals and care homes need planned work with your estates and infection control teams. Offices, science parks and research buildings need ventilation, AHU and damper work. We also clean grease traps and test fire dampers.

Many colleges and institutions have more than one kitchen, plus servery hoods, staff kitchens and laundries. We can survey them all, list every system and put them on one maintenance contract, each with its own interval and records. Restaurant and pub groups can do the same across Oxford and Oxfordshire. Our 24/7 emergency line covers fan failures and urgent cleans between scheduled visits.

How it works

  1. Send details. Tell us about your kitchen or building and send a few photos: canopy, filters, access panels and the last certificate if you have one.
  2. Get a fixed quote. We survey from your photos or on site and give you a fixed price, usually within one working day.
  3. We clean. We arrive when you’re closed, protect the kitchen and clean the system back to bare metal wherever it can be reached.
  4. Certified. You get a TR19® certificate and a photo report, with the readings, anything we couldn’t reach and the next clean date.
