Greater London · Canopy and hood cleaning
Custom House canopy cleaning
Canopy cleaning for Custom House, from a team that has been trading since 2009. Evenings, overnight and weekends, plus a 24/7 emergency line.
- Wet, greasy drips from the hood
- Overflowing grease troughs and gutters
- A plenum thick with grease behind the filters
Canopy cleaning in Custom House
Every TR19® Grease clean includes the canopy, but a canopy can also need cleaning on its own, between full system cleans. Where that is the case, we’ll be clear that the ducts and fan aren’t included, so your records stay accurate. The work covers wall canopies, island canopies and plenum chambers, and the jobs we see most are a canopy that no longer draws the smoke away and grease dripping from the canopy edge.
Kitchens in Custom House, like many across London, can share a building with flats or offices, with the duct running up through shared risers. Grease in a duct like that is a fire risk to the whole building, not just the kitchen, so a regular TR19® clean protects everyone in it.
A written report with pictures follows every visit, so you have a record of what was done and when. Kitchen extract cleaning to TR19® Grease is certificated through the BESCA Vent Hygiene Elite portal.

Aftercare tips
A little care between visits keeps the system in better shape. We recommend:
- Keep every filter in place while cooking
- Wipe the canopy down at close every day
- Don’t scrape the canopy with metal tools
- Clean the baffle filters often
We point out anything we noticed while the canopy was apart: damaged filters, gaps around the housing or troughs that need emptying more often. It’s a short list of what to watch, not a sales pitch.
Keep the fan running throughout service and for a short while after. Air that keeps moving carries less grease onto the canopy.
The process
There are three stages on the day: set-up, the treatment itself and the sign-off. Getting ready means protecting surfaces and switching off what needs to be off, and the sign-off is a written report with pictures. The middle part takes longest, which takes an hour or two for one small canopy, longer where there are several. Before any visit in Custom House, we agree where the van can stop and how equipment reaches the system.
- The canopy is checked from photos or on a visit.
- Once the kitchen has closed, the cooking line is cooled and sheeted.
- We lift out the filters and scrape the plenum and housing.
- The canopy shell, seams, troughs and gutters are degreased inside and out.
- Filters are refitted, the area cleaned down and the photo report put together.
How to prepare
- Tell us about access, such as roof hatches, plant rooms, ceilings or locked areas
- Move anything stored near the system
- Tell us where we can park and unload

How the job changes from site to site
Wall canopies
Wall canopies sit against a wall over a cooking line. The joint between canopy and wall is a common grease trap, so we clean along it as well as the inner skin.
Plenums and filter housings
Behind the grease filters is the plenum. Grease that slips past the filters settles there, and it’s cleaned every time we clean the canopy.
Canopy cleaning in Custom House: the local picture
The FSA’s food hygiene register includes about 22 pubs, bars and clubs and about 18 hotels, B&Bs and guest houses in Custom House and the streets around it, up to about 1.5 miles out. A pub or hotel kitchen that cooks every day builds up grease in its extract like any other. The fire and rescue service for Custom House is London Fire Brigade. Fire and rescue authorities enforce the Fire Safety Order in most non-domestic premises, and in a kitchen that fire risk includes the grease in the extract. Night work suits London kitchens, and roads and loading bays tend to be quieter too.
Healthcare kitchens, like those at hospitals such as Albert Dock Seamen's Hospital (about 0.5 miles north-east), often cook for long hours, which puts them in BESA’s heavier-use bands. For schools such as St Joachim's Catholic Primary School, kitchen extract cleaning is usually booked for the holidays, when the canteen is closed.

Around Custom House
Typical jobs here are in premises near Thames Barrier Park, The Royal Docks Community School and Royal Docks Academy. Custom House has its own railway station: Custom House station. When to call us in Custom House
Because the plenum sits behind the filters, it’s easy to forget. Daily cleaning reaches the canopy face but rarely gets further, leaving the plenum and housing to collect grease between professional cleans.
Any of these means the system needs a check-up:
- Condensation and grease dripping together
- Filters that clog soon after cleaning
- A hood coated in old grease
- Smoke hanging around the canopy during service
If you run a café or takeaway near Custom House station, early starts and late finishes leave little time to clean, so overnight extract cleaning suits.

What happens if it’s left?
Grease dripping from the hood can fall onto food, pans and worktops. It’s a food hygiene concern as much as a fire concern, and environmental health officers look at the cleanliness of equipment, extraction included. London buildings are shared, so a fire or failure in one system can reach the neighbours above and beside you.
When the work has to happen, how we reach it and how big the site is all affect the cost. We take each of them into account and give you a fixed price before any work starts.

Custom House: your questions answered
Can you clean school kitchen extracts in Custom House during the holidays?
Yes. The holidays are the usual time for school work. Food Standards Agency records list about 52 schools, colleges and universities with registered kitchens within about a mile and a half of Custom House. Tell us your holiday dates and we’ll book the visit for when the site is empty.
Can you work in Custom House outside opening hours?
Yes, we can come after you close and finish before you open. The work in Custom House can fit around your hours. Tell us your opening hours when you ask for a quote.
How much of the canopy do you clean?
Inside and out, along with its seams and grease channels. The plenum and filter housing behind the filters are cleaned too.
What does TR19 mean?
A BESA specification in two main parts: TR19® Grease for kitchen extracts and TR19® Air for supply and extract systems. It is not law, but it’s the benchmark.
What types of premises do you cover?
We work for restaurants, pubs, hotels, schools, colleges, hospitals, care homes, offices and shops, as well as food production and leisure sites.
How long does canopy cleaning take?
That depends on the size of the canopy and how much grease is on it. As a guide, it takes an hour or two for one small canopy, longer where there are several.
What happens to the waste?
Anything we remove is contained as we work and taken away with us, from grease and debris to used cleaning water. We don’t leave it behind.
What kinds of canopies do you clean?
Most commercial kitchen canopies, from one small hood to a long run of canopies. The survey tells us how best to clean yours, from pictures or a visit.
Landlords, agents and facilities managers
The Fire Safety Order 2005 puts the duty to manage fire risk on the responsible person, and that can be the employer, the owner, a landlord, a facilities manager or a managing agent. Where responsibility is shared, records matter even more.
Managing agents often deal with us directly. Send the address, what’s needed and how access works and we’ll come back with a fixed quote.
In-house cleaning or a specialist?
In-house cleaning and specialist cleaning do different jobs. A daily filter wipe and a weekly filter wash keep grease down at the front of the system, but grease that has passed the filters is out of reach. Reaching it takes a specialist with the right equipment.
Keep a record of what your team does. A simple log of filter washes, wipe-downs and checks shows an inspector that the system is looked after between visits, next to our reports.
